Saturday mornings are pancake mornings in our house.  My husband typically governs the griddle but – occasionally – I get called up from the minors to flip flapjacks.  Desperate to avoid a second best version of our Saturday standard, this weekend I decided to experiment with the new and exciting “Cake Batter Pancakes” — complete with a powdered sugar glaze and sprinkles galore.  I am thrilled to report that they were a huge hit and I am officially ready to bring the heat the next time I make the starting line-up.

And voilà!…Pancakes that will have them saying “Ooh la la!!!”

CAKE BATTER PANCAKES

INGREDIENTS:

For the Pancakes 

– 1 cup pancake mix

– 1 cup yellow cake mix

– 1 cup milk

– 2 tablespoons melted butter

– 1 teaspoon vanilla

– 2 eggs

For the Glaze

– 2 1/2 cups powdered sugar

– 3 tablespoons plus 2 teaspoons milk (enough to achieve desired consistency)

– 1 teaspoon vanilla

– sprinkles!

 

DIRECTIONS:

– Heat griddle to 375 degrees.  Grease with cooking spray if desired.

– In medium bowl, combine pancake ingredients until smooth.  Pour roughly 1/4 cupfuls onto hot griddle.  Wait until batter begins to bubble and then flip and cook on other side.  These pancakes are slightly thicker than typical pancakes and might require slightly longer cooking time.  Stack on serving plates.

– In small bowl, whisk powdered sugar, vanilla, and milk until smooth.

– Drizzle glaze on pancakes and finish with sprinkles.
